Quick shakshuka with homemade tomato sauce

Breakfast or dinner in minutes

It is an easy and delicious recipe, and most importantly it saves you a lot of time, especially if you have already prepared the tomato sauce.
Many may not realize the importance of preparing this sauce in advance, but it is actually a smart way to save time and effort, and becomes a ready-made base for more than one meal.
The shakshuka in this recipe is ideal as a nutritious breakfast, or a light lunch/dinner, especially for those short on time during the week.

Quick Shakshuka Ingredients

2 eggs

4 tomatoes, medium-sized pieces

Two medium onions, chopped into medium pieces

Your favorite spices (I added coriander, cumin, turmeric, and pepper)

Salt and pepper

Tomato sauce

Brie cheese (an addition, not mandatory, but it added a delicious flavor to the eggs)

How to make shakshuka

In a pan over medium heat, heat the olive oil and add the chopped onion until softened.

Add the tomato sauce and stir for three minutes.

Then add the chopped tomatoes and spices, and cook the mixture over low heat for five minutes with the pan covered until the sauce thickens.

Uncover the lid, then add the eggs directly on top of the sauce, and re-cover the pan until the eggs are cooked to your liking.

Brie cheese is optional; place pieces of it on top of the eggs a few minutes before they are cooked so they melt slightly.

Serve the shakshuka on a slice of toast and enjoy it with fresh orange juice.

Note: Before adding the eggs, if there is too much tomato sauce at this step, you can keep the amount you need and the rest will be for the shakshuka.
